Grilled Corn Salsa

Earlier this week I had a craving for fresh-made corn salsa. I did a little bit of research and found this delicious (and addictive) recipe from Lisa Lin on Healthy Nibbles. I had a moment where I remembered back in college a few of my friends would get together and chow down on a DELICIOUS corn salsa. I remembered the ingredients, but wasn't sure the quantities, spices or how to assemble. Until I found this tasty recipe. It's healthy, simple and easy to put together.

I actually wanted to share with friends so I took out the tomatoes (for an allergy) and made it more of my own. There were also some Weight Watcher counters in the group so we had the bright idea of doing less tortilla chips and adding this corn salsa on top of a salad with grilled chicken and vegetables. DELICIOUS! Next time corn is on sale or in season, eat until your heart's content! :)

Also, for those who #mealprep, this salsa is great to store for the week's meals. I actually think it get's more tasty with the acid in the lime juice and spices soaking into the corn. Goes great as your veggie for the day to have alone or when you're craving a quick snack. This salsa would also be great with veggie chips in case you don't want to waste as many calories/carbs on tortilla chips.
